Single Serve Vegan Chocolate Self-Saucing Pudding

Ridiculously quick and easy and even more ridiculously delicious and warming. The perfect rich and gooey chocolatey-ness required on a rainy Sunday night. Macadamia oil makes it oh so nutty and raw cacao ensures it is rich and decadent, yet full of nourishment. You can make this one either in the oven or in the microwave!

Serves 1

Ingredients:

3 tbsp almond meal

2 tbsp brown rice flour

1 1/2 tbsp cacao

2 tbsp coconut sugar

1/2 tsp baking powder

Pinch of sea salt

3 tbsp milk (your choice - soy, coconut, almond etc.)

2 tbsp macadamia oil

1/4-1/2 tsp vanilla

Method:

1. Add all dry ingredients to a mug or ramekin and stir together.

2. Add wet ingredients and stir again.

3. Sprinkle extra cacao and coconut sugar over the top and pour over 2 tbsp boiling water.

4. Bake in the oven for 15 mins or pop in the microwave for 1 - 1.5 mins or until cakey/fudgey with a sauce remaining on top. Enjoy!
