Just like sorbet but filled with antioxidant and probiotic goodness, this acai boat is exactly what you need to cool you down on a warm spring day like today! And who doesn’t love an edible bowl?! Red papayas are best for this as they are sweeter and I prefer the flavour of them. However, if they’re not available, you can simply use a yellow pawpaw like the one I have used. This fruit is fantastic for digestive and immune wellbeing as well as skin hydration and elasticity as it is full of Vitamin C and A. Acai berries are higher in antioxidants than any other berry, contain healthy fats (including omega 3, 6, and 9), fibre, essential amino acids, electrolytes, other trace minerals and B vitamins. Be sure to buy pure 100% acai as some brands add sugar (acai is not naturally sweet). Probiotics improve our gut health, which in turn improves the health of almost every other part of our body, particularly our skin! Enjoy this colourful and wonderfully healthy meal while relaxing in the warm sunshine and you will feel on top of the world!

Serves 1

Probiotic Acai:

½ acai pouch (I used Creative Gourmet’s Organic Acai Pulp, available from Coles)

1 frozen ripe banana

½ cup frozen blueberries

¼ cup probiotic coconut or Greek yoghurt

1 tsp. The Beauty Chef’s Advanced GLOW probiotic powder (optional)

Toppings:

½ fresh mango, sliced

½ green apple, sliced

4 strawberries, sliced

1 tsp. pepitas

1 tsp. chia seeds

1 tsp. shredded coconut

½ a fresh papaya (seeds removed) as the serving bowl.

  1. Slice the fresh mango, apple and strawberries nice and thinly and set aside.

  2. Scoop the seeds out of the papaya and set aside.

  3. Place all of the probiotic acai ingredients into a blender and process, scraping down the sides or jiggling the blender to ensure it all combines smoothly. You can add a splash of almond or rice milk if it needs more liquid to blend properly. It should be the consistency of soft serve ice-cream.

  4. Pour the acai into the papaya half and quickly top with the fresh fruit, pepitas, chia seeds and shredded coconut (or any other crunchy toppings you can find).

  5. Eat immediately before it melts! Enjoy.
