      <image:caption>These pancakes use oat flour, buckwheat flour and LSA as a base and a ripe, juicy pear for sweetness. They are served on a large stoneware plate I made with the roller and then pinched and bent the sides before glazing with Mayco’s matte black glaze. The caramel sauce comes from one that my favourite cookbook author, Eleanor Ozich, made to drizzle over a beautiful cake. It really is divine and goes perfectly with these fluffy pancakes. This recipe is gluten, dairy and refined-sugar free. To make it vegan, simply replace the raw honey with pure maple syrup and the eggs with flax or chia ones. The ginger in these pancakes not only adds a beautiful spiciness, but also aids digestion and reduces inflammation in the body. This breakfast is wonderfully healthy and delicious and is sure to impress!</image:caption>

      <image:caption>This warm weekend weather has me dreaming of my ultimate summer treat! These Coconut Chai Popsicles with Salted Caramel are seriously divine! I shared them with my neighbours while we had a picnic in their garden. Everyone absolutely loved them and one neighbour even said, “This is the best thing I’ve ever eaten”! These popsicles are vegan and free of gluten, dairy and refined sugar. They taste absolutely delectable, yet they’re full of potassium from the banana and fibre, vitamins C, E, B1, B3, B5 and B6 and minerals including iron, selenium, sodium, calcium, magnesium and phosphorous from the coconut. Coconuts provide fat that is mostly in the form of medium chain saturated fatty acids. In particular, one called lauric acid. Lauric acid is converted in the body into a highly beneficial compound called monolaurin, an antiviral, antifungal and antibacterial that destroys a wide variety of disease causing organisms.</image:caption>

      <image:caption>This long weekend is looking like a very warm one! The best way to keep cool is with my Blueberry and Chia Mermaid Pops. I created these after returning from a trip to New Zealand where we did a 6 day hike through the wilderness on the South Island and visited family on the North Island. In Mount Maunganui I found a gorgeous little organic store, called Be Organics. Here I found ‘Mermaid Latte’ powder created by a local Australian brand Nutra Organics. My mind immediately jumped to all of the beautiful, bright blue, summery goodness I could create with this superfood blend and I had to have it! Its colour comes from the matcha butterfly pea flower and blue spirulina and it also contains Ayurverdic chai spices, coconut milk and manuka honey for a delicious flavour! I have added chia seeds that turn part of the ice blocks to chia pudding, creating an extra thick and creamy texture as well as adding in some great plant protein and omega 3.</image:caption>

      <image:caption>These pretty little tarts are absolutely glorious! The pastry is perfectly crispy and nutty and is contrasted beautifully with the creamy, sweet and tangy lemon curd and nectarine filling. I shared them with friends, neighbours, my pottery teacher and my boyfriend and they were all blown away. Every single ingredient is extremely wholesome and nourishing and the recipe is extremely easy. All ingredients are simply blended together for the base and then the filling. I have used slices of beautiful summer nectarines to adorn the top of each tart. However, other fruits, such as raspberries, would also work. Twice recently I have made this into one large tart and replaced the lemon juice and nectarines with passionfruit pulp. Give this delicious variation a try if you're a passionfruit lover like me and have some on hand! (The variation tips are included below the original recipe).</image:caption>

      <image:caption>This mousse has caramel undertones and reminds me of the macadamia ice cream I used to get from the kiosks near the beach. However, I’d have to say that it is even better, and of course, it is much, much healthier! I made the macadamia butter myself from scratch and it is very easy. Simply, roast 1/3 cup macadamias in the oven or under the grill until they turn golden (watch them closely). Then, place them in a coffee grinder or blender and process until they turn to nut butter! If you cannot find macadamias, you could replace them with roasted cashews and cashew butter. I have also included a vegan alternative to egg white. When whipped, aquafaba (the liquid from canned/cooked chickpeas) resembles whipped egg whites! Although, if you prefer, you could simply leave the egg whites/aquafaba out and it will be equally delicious and extra creamy, just less light and airy.</image:caption>

Pesto and avocado make a silky smooth pesto sauce and the peas add bursts of sweetness among the garlic, chilli, lemon, spinach and olive oil. I have used San Remo pulses spaghetti, adding a nice amount of protein to this dish. I actually came up with it one day when we had 'nothing' at home for lunch. I grabbed whatever was in the fridge, freezer and cupboard and came up with this delicious meal that we have been having weekly ever since!</image:caption>

      <image:caption>(Amazing served with honey and thyme butter)! This scrumptious soda bread reminds me of a really good scone, one that melts in your mouth and brings you a real sense of comfort. It has the most amazing texture and the combination of nutritious flours creates a delicious, nutty flavour. One of the realisations I had while overseas was that what I’d like to focus on with gluten free cooking (and baking in particular) is texture. Texture is often the one thing lacking in gluten free baked goods, and manufacturers add all sorts of strange, refined ingredients to try to replicate the texture of regular gluten-based products. While travelling, I would watch Daniel devour his third crispy almond croissant for the day and I would finally find a gluten free version (or something similar) to have myself, only to be dissatisfied. I realised, even if they got the flavour right, if the texture was off, I just simply did not enjoy the food. I thought, ‘if I can create gluten free recipes with both amazing flavour AND texture, I will be one happy lady’. And hallelujah! I have come home, inspired by the hearty and comforting Irish soda bread, and made this wonderful loaf that Daniel said tasted “even better than the original in Ireland” (don’t tell an Irishman that)! Give it a go this weekend and enjoy with a smearing of butter and honey while it is still warm.</image:caption>

I grew up working in a bakery and love a warm, wholesome mince pie as much as anyone. However, most are filled with vegetable oils and refined white flour. This pastry recipe is very wholesome and super easy to make. The filling tastes just like the real deal, as does the healthy tomato sauce! If you’re making the sauce, I recommend doing this first, before you make the pies – that way you can use it in the mince mixture. You also need to note that the pastry needs to rest overnight, so will need to be made ahead. However, both are super simple, so don’t let that deter you form trying these scrumptious pies. I tested them on vegan friends, as well as meat-eaters and both said they tasted just like a regular meat pie! I cannot express how delicious and satisfying these were.       <image:caption>This date and walnut loaf is something special. Soaking the dates in hot chai tea and adding malty, sweet carob powder creates a delicious twist on the original. I have used Prana Chai as it is the best chai tea I have found. If you do not have chai tea, simply add chai spices to the pan, such as cinnamon, ginger, cloves and cardamom, as well as sea salt and honey. Carob powder is available in health food stores, however, if you cannot source it, simply leave it out and the chai flavour will shine through. This loaf is high in protein and healthy fat from the almond meal, walnuts and eggs and only uses dates and a tiny bit of honey for sweetness.  If you’re vegan, simply replace the eggs with flax/chia ones and you’re set to go. This loaf is delicious on its own or topped with organic butter/nut butter for a healthy breakfast or snack and it goes perfectly with a cup of chai tea!</image:caption>

      <image:caption>Well this recipe was a real experiment, but I tell you what, the end result was damn delicious! I bought some beautiful passionfruit from the markets and the first thing it reminded me of was the decadent vanilla slices we used to sell at the bakery I worked at as a teenager. I immediately knew I’d have to have a go at making a version without the gluten, dairy and refined sugar. Rather than puff pastry, my version is more of a shortbread, which I’ve actually decided I prefer! However, if you are short of time, you could simply buy gluten free puff pastry to use. Just be sure to check the ingredients list as some of these contain vegetable oils, and numbers and additives. This pastry is totally worth it if you have the time! The custard filling is even great for gut health with the addition of gelatin and the icing is full of goodness, being made from tahini! Trust me, it tastes so decadent, you’d never even realise how good it is for you! Obviously, it is still to be consumed in moderation (there’s a bit of coconut oil in that pastry), but this has far more nutritional value than your traditional vanilla slice and is going to be much kinder to your body!</image:caption>

      <image:caption>Gluten-free, dairy-free and refined-sugar free! I have used brown rice flour and coconut sugar to keep these buns low GI and as wholesome as possible. Apart from family coming together, Hot Cross Buns are my next favourite thing about Easter! I love all kinds, but the choc-chip variety are my favourite. Why just have chocolate on Easter when you can have chocolate and sweet bread together? In this case, I have used carob as I love its malty flavour and after using it alongside chai tea in my date and walnut loaf (see previous posts), I can’t stop using chai and carob together! You could easily swap the carob for dark chocolate in these buns as well (I’ll try this in my next batch). The carob/chocolate melts through the soft bun when heated, the chai tea adds subtle warmth and spice, and when smeared with some organic butter, these are just divine! Gluten free baking takes a little bit of science experimentation. I did lots of research about how to ‘replicate’ or ‘mimic’ the gluten in gluten free baking to create a similar texture to regular baking with wheat. You may need to visit your local health food store for a few of these ingredients that help to thicken and bind the dough. Totally worth it when it means not missing out on this Easter treat because you can't have gluten. Enjoy with a steaming hot cup of tea!</image:caption>

      <image:caption>When I first met my boyfriend he used to make me delicious crepes with caramel apples and cream. They were absolutely delicious and I totally forgot about them until something sparked my memory a couple of weeks ago and I was suddenly craving them again! However, I had to now find a way to make them gluten-free, refined-sugar free and with a dairy-free option, while still maintaining their scrumptiousness! I used the far more nutritious flours of buckwheat and brown rice, low GI coconut sugar, some yoghurt for a sourdough-like crepe and had to use the gorgeous figs that are in season! The eggs and natural yoghurt give these plenty of protein and you get a nice dose of seasonal fruit, making them a nutritious breakfast! You could swap the apples and figs for caramelised bananas or pears if that’s what you have on hand.</image:caption>

      <image:caption>So, another recipe inspired by my trip to New Zealand! Auckland was absolute foodie heaven! We ate the best Vietnamese, Mexican and Sushi I’ve ever had and the most crazily creative ice creams you can imagine! However, it was when I entered a gorgeous book shop that I read about a cake made of beans. I have been making black bean brownies for years and years. However, an entire cake had me very excited. I came home to the markets being full of fresh figs and decided I’d give a fig bean cake a go. The results were amazing! This cake is seriously moist and the most perfect texture (like a white chocolate mud cake). The best part is that it’s mainly made up of beans, eggs and almonds, all highly nutritious and protein rich ingredients!</image:caption>

These pancakes are sweetened with banana and a tiny bit of coconut sugar and include hidden spinach (that you cannot taste at all), which gives them their wonderful, vibrant colour. I have used whipped egg whites to enhance the protein content and to create super fluffy pancakes. However, you can replace this with aquafaba (the liquid from canned/cooked chickpeas), which will have the same effect. You will need to prepare this the night, but it is super simple and it simplifies your morning routine. I couldn’t go past making some healthy, nourishing passionfruit curd to top it with and it was divine. Smashed avo on toast alone does not contain enough protein to keep you full and satisfied. However, adding these delicious crispy, spiced chickpeas with sesame seeds and almonds turns smashed avo into a complete meal. You have carbohydrates from the bread, healthy fats from the avocado and protein from the chickpeas, nuts and seeds. Not to mention all of the nutritional benefits of every ingredient! Ensure you choose a good quality bread. I get a gluten free sourdough from the market that is made from brown rice flour and a mixture of seeds.       <image:caption>You know the weather is warming up when mangoes are on the specials boards out the front of every fruit barn in town. And what a wonderful sight it is! Mangoes are one of nature’s sweet delights, and thankfully enough, they’re also brimming with vitamins and minerals, especially Vitamin C and A. Curcumin is the main active ingredient in turmeric. It has powerful anti-inflammatory effects and is a very strong antioxidant. Unfortunately, curcumin is poorly absorbed into the bloodstream. It helps to consume black pepper with it, which contains piperine, a natural substance that enhances the absorption of curcumin by 2000%. Curcumin is also fat soluble, so I have included half of an avocado to not only enhance the creaminess of the smoothie, but also to increase the absorption of the turmeric. This smoothie is quite filling, and I actually couldn’t finish the last little bit…so instead of tipping it down the sink, I used it to create some ‘Mango Coconut Smoothie Muffins’ and my goodness they were moist and delicious. So if you make this smoothie for breakfast, you can simply set aside ½ cup of it and you’ll be ready to bake your morning tea too!       <image:caption>Recently, I made myself a thick, sweet and creamy golden smoothie for breakfast, using lots of seasonal produce. However, I was almost to the end of it when I realised I was actually really full! When I looked down, I realised I only had about ½ cup of it left, but with all of the fresh, nutritious ingredients I had put in it, I didn’t want to simply pour the goodness down the sink. I decided this sweet, creamy mixture would be a great base for me to create some morning tea! So, I swiftly turned the remains into these delicious, moist muffins, which almost have a ‘fudgey’ consistency. It was such a spontaneous experiment, but I am so glad that it happened!       <image:caption>What a delightful discovery it was when we found the neighbours huge, thriving mulberry tree draping over our back fence! The ground beneath turning purple was what caught my eye and immediately took me back to my childhood, where all I could see was purple stained clothes, hands and faces that were left after the exciting, endless foraging. I could only guess that these vibrant, organic berries were brimming with health benefits. After doing some research, I found that they have some properties that make them unique to most other berry varieties. They are uncommonly high in iron and protein as well as the usual Vitamin C, E and antioxidants. The first thing that came to mind was the classical mulberry jam (an uncooked, lightly sweetened version that still allowed the fruit to shine through). However, mulberry jam on its on is not exactly what one would be after for breakfast! So I decided I would grind some gluten free oats into flour and mix it with some natural yoghurt and eggs (all your typical breakfast ingredients), to create something special. These scrolls were the end result and they are just divine, particularly when they are still hot and fresh out of the oven.</image:caption>

The textures compel me love it even more than regular banana bread – the gooey, caramel-like pops of fresh date, the chewy strands of coconut &amp; the soft pillowy backdrop made of bananas, eggs and the star ingredient – green banana resistant starch! This is simply dried green bananas made into a flour that is very high in prebiotic fibre. Prebiotics are what the good gut bacteria feed off and use to stay alive &amp; multiply.  It is important to include prebiotics in your diet to nourish beneficial gut bacteria and support your immune system by promoting a healthy microbiome. This recipe is also very low in sugar compared to most banana breads, as it simply relies on the overripe bananas and caramelly dates, which give it just the right amount of sweetness with the added nutrients and flavour of whole fruit.</image:caption>

      <image:caption>This delicious savoury loaf is filled with veggies, protein and omega 3, making it the perfect breakfast! Top it with some guacamole or avocado and halloumi and you’ll be taken to healthy heaven! The texture of this loaf is light, but more moist than other breads, which I find delicious. However, you can simply toast it to remove some of the moisture. It is a fantastic way to get some vegetables in the morning and the walnuts provide us with those omega 3 fatty acids that most of us are lacking in our diets. I have used teff flour in this bread, which is made from a gluten free grain that is higher in protein than wheat, high in iron, calcium and contains all eight essential amino acids. It also has more calcium, fibre, zinc and thiamine than quinoa. I simply bought teff grains and ground them in my coffee grinder to make a flour, however, if you cannot find it, simply use brown rice flour or buckwheat flour instead. This is great to make on a Sunday, so you can quickly grab slices through the week for a nutritious breakfast, lunch or snack!</image:caption>

      <image:caption>I love granola for its crunchy texture and delicious wholesome ingredients. This sweet breakfast pizza involves granola, yoghurt and fruit, just like you would normally eat granola. However, it combines these three delicious elements, the crunchy granola, the creamy yoghurt and the juicy, sweet fruits, in a new and exciting form. The tahini, maca and vanilla create the most delicious granola. The tahini mixture that you heat over the stove tastes like caramel! I have used activated almonds here, which are simply almonds that I have soaked for 12+ hours and then gently dried again. This makes the almonds much easier to digest as raw almonds contain phytochemicals that prevent you from getting the full benefit of the nutrients in almonds when you digest them.       <image:caption>Gluten-free, dairy-free and refined-sugar free! I have used brown rice flour and coconut sugar to keep these buns low GI and as wholesome as possible. Apart from family coming together, Hot Cross Buns are my next favourite thing about Easter! I love all kinds, but the choc-chip variety are my favourite. Why just have chocolate on Easter when you can have chocolate and sweet bread together? In this case, I have used carob as I love its malty flavour and after using it alongside chai tea in my date and walnut loaf (see previous posts), I can’t stop using chai and carob together! You could easily swap the carob for dark chocolate in these buns as well (I’ll try this in my next batch). The carob/chocolate melts through the soft bun when heated, the chai tea adds subtle warmth and spice, and when smeared with some organic butter, these are just divine! Gluten free baking takes a little bit of science experimentation. I did lots of research about how to ‘replicate’ or ‘mimic’ the gluten in gluten free baking to create a similar texture to regular baking with wheat. You may need to visit your local health food store for a few of these ingredients that help to thicken and bind the dough. Totally worth it when it means not missing out on this Easter treat because you can't have gluten. Enjoy with a steaming hot cup of tea!</image:caption>

I have used organic buckwheat flour to create my healthy version of an ANZAC biscuit, which acts as the base, and I have filled it with a nutritious caramel made of dates, almond butter and organic coconut cream. If you do not have a blender to make the caramel, simply simmer a can of coconut cream and ½ cup honey/maple on the stove until thickened and then stir through some sea salt and vanilla. Either version is absolutely delicious. To top it off, I have included caramel’s best friend, toasted macadamias! Give these little treats a go this ANZAC Day and enjoy while commemorating and honouring those who have fought for our freedom. Note: The bases are not too sweet.       <image:caption>This porridge combines a variety of gluten free wholegrains with nuts and seeds to create a delectable, nutrient-rich breakfast. Soaking the grains and seeds in brewed chai tea not only makes them DELICIOUS, but soaking also ensures they’re easier to digest, and therefore, much better for your gut health. This porridge is super creamy and naturally sweetened with a small amount of fresh fruit. You could double or triple the dry porridge mix to keep on hand as a quick, gluten free porridge base. It is a fabulous way to mix up your usual porridge routine, adding both flavour and nutrient diversity to your diet. However, if you don’t want to source the various grains, try the recipe with just one cup of oats in place of the first four ingredients. This kept me so full that I couldn’t even eat lunch – VERY unusual for me! Serves 2  Ingredients: 1/3 cup brown rice flakes ¼ cup millet flakes (or pre-cooked millet - 1/4 cup when dry) ¼ cup amaranth 2 tbsp. quinoa flakes 2 tbsp. macadamia nuts, finely chopped 2 tsp. flaxseed meal 1 tsp. cinnamon ½ tsp. sea salt 2 cups plant-based milk (I used a cup each of Bonsoy &amp; Almond Quench – Pure harvest) 2 tbsp. Prana Chai Tea 1 small very ripe banana 1 fresh medjool date 1 tsp. vanilla extract   2 pears (beurre bosc) 1 heaped tsp. ghee or coconut oil 2 tsp. pure maple syrup 1 tsp. vanilla   Handful toasted macadamias 1-2 Tbsp. Noyo Hazelnut Butter (or Macadamia butter) 1-2 tsp. maple syrup Pinch sea salt   Method: 1.     Combine the milk and chai tea in a small saucepan over medium-low heat and allow to infuse for 5-10 minutes or according to the packet instructions. Remove from the heat and allow to cool slightly. 2.     Add the brown rice flakes, millet flakes, amaranth, quinoa flakes, macadamias, flaxseeds, cinnamon &amp; sea salt. Leave to soak overnight. 3.     In the morning, slice the pears in half, remove the core and lightly dust with cinnamon (optional). Heat a non-stick frying pan over medium-low heat and add the ghee/oil, maple and vanilla. Then place the pear halves cut-side down, swirling them in the maple mix, ensuring the cut-sides are generously coated. Cover the pan with a large lid or a large bowl – this will allow the pears to steam and soften while the cut side also caramelises. (Note: If using a bowl, you won’t have a handle to lift it off the pan, so be very careful removing it. Use a fork to lift it up from the bottom and keep your hands away from the steam that will come out). Allow to cook while you make the porridge (approx. 20 mins), checking a few times to ensure the underside doesn’t burn. 4.     While the pears cook, add the banana, date and vanilla to a small blender with a couple of tablespoons of boiling water. Blend until smooth and pour into the porridge mixture. 5.     Heat the porridge over medium heat until it begins to gently simmer, then reduce to low, stirring it regularly. Allow to cook until it is nice and thick and all grains are tender. Taste and adjust with salt and sweetener of choice, if needed. 6.     Meanwhile, toast the macadamias in a small frying pan until golden. Mix together the hazelnut butter, maple syrup &amp; sea salt and set aside. 7.     Serve the porridge between two warmed bowls. Top with the vanilla poached pears, hazelnut butter and toasted macadamias. Serve with a drizzle of warm milk, if desired. Enjoy!</image:caption>

      <image:caption>Carrot Cake would have to be my favourite kind of cake. I love the warming spices, the creamy and not overly sweet icing, and the crunch of the toasted nuts. I enjoy sweets, but I’m not a huge fan of super sweet foods. I prefer foods that include both sweet and slightly savoury elements and with contrasting textures. That is why a cream cheese icing is my jam! Silky smooth creaminess &amp; a savoury-sweetness against the light and tender crumb of the almond meal &amp; olive oil cake. This version is both gluten free and vegan, with no refined sugar, as always! This may make you assume the taste and texture are compromised, but I promise you, they absolutely are not! My partner told me it is even better than a regular carrot cake made from white flour and eggs. My vegan friends certainly approved too. I hope you enjoy this absolute delight!</image:caption>

      <image:caption>So this recipe idea came to me when I was listening to the ‘Home Cooking’ podcast by Samin Nosrat and Hrishikesh Hirway on my morning walk. They mentioned “Occi Gnocchi’ when talking about octopus gnocchi and my mind started to wander, thinking about other types of gnocchi that could have rhyming names… '“Banoffee Gnocchi” came straight to mind in a few seconds and I just knew I had to create it. I even did a Google search when I got home to confirm that no other banoffee gnocchi existed out there - especially not a gluten free &amp; vegan one! The banana element of banoffee pie is the base of the gnocchi and it is served with maple caramel, cashew whipped cream and pecan biscuit crumb - so, so decadent and so delicious! I hope you love this quirky, creative dessert as I loved creating it! The four elements make it seem overwhelming, but each one is surprisingly quick and easy. Enjoy!!</image:caption>

      <image:caption>1 can black beans, drained + rinsed ¼ cup black tahini (or use 3 tbsp. regular tahini + 1 tbsp. oil of choice) 2 flax eggs (2 tbsp. flaxseed meal + 5 tbsp. water) 1 tsp. vanilla extract ½ cup coconut sugar ¾ cup raw cacao powder 1 ½ tsp. baking powder Pinch of salt   Chocolate drizzle (optional) 60g of 70% dark chocolate (6 rows of Green &amp; Blacks) 60g coconut cream (1/4 cup) 1 tbsp black tahini   1.     Preheat the oven to 180C and line a 20cm x 14cm baking tin with baking paper (I used a 20cm x 14cm glass Pyrex dish). 2.     If using, make the flax eggs by combining the flaxseed meal and water in a small bowl. Whisk and allow to sit for 5 minutes to thicken. 3.     Place all ingredients into a food processor or blender and process for a few minutes until the mixture is super smooth. 4.     Scoop the mixture into the lined baking tin and smooth the top with a spatula (the mixture will be quite thick). 5.     Bake for 15-20 minutes or until the top begins to dry slightly. You want the brownies to remain fudgy in the centre. Allow to cool for half an hour in the pan before slicing and serving. 6.     If adding the chocolate drizzle, simply break the block of dark chocolate into squares and place into a small metal bowl over a small saucepan of simmering water. Stir gently until beginning to melt. Add the coconut cream and black tahini. Stir to combine. Remove from the heat and add 1-2 tablespoons of the hot water that’s in the saucepan below and whisk until you achieve a smooth mixture. Drizzle the chocolate over the brownies just before serving if you want it runny &amp; warm, or pour it over and allow it to set into a ganache in the fridge before slicing. Enjoy!</image:caption>

      <image:caption>Makes 6   2/3 cup almond meal 1/3 cup coconut flour OR organic corn flour 1/4 cup coconut sugar 70-80 g coconut oil, room temperature (solid, but not hard) 1 tsp. vanilla extract 1/2 tsp baking powder pinch of salt   3 tbsp. cashew butter 3 tbsp. passionfruit pulp 2 tsp. maple syrup   1.     Preheat the oven to 180°C and line a baking tray with baking paper. 2.     Mix the almond meal, coconut flour OR corn flour, coconut sugar, baking powder and salt together in a bowl. 3.     Add the coconut oil (80g if using coconut flour and 70g if using corn flour) and vanilla and mix together with your hands until you have a smooth dough. 4.     Take teaspoons of dough and roll into balls before placing onto the prepared tray. Press each ball down with a fork. 5.     Place the biscuits into the oven to bake for about 6-8 minutes. Remove and allow to cool completely before icing. 6.     For the icing, place all ingredients into a small bowl and stir well to combine. Set aside in the fridge. 7.     For each melting moment, place half a tablespoon of icing onto the bottom of a biscuit and then place another top. Enjoy immediately for the best texture!</image:caption>

Filled with summer ingredients, such as fresh watermelon, raspberries and coconut water, these Turkish Delights are even more flavoursome than their traditional counterparts! Sweetened with just a little raw honey and flavoured with rosewater and vanilla, they’re absolutely to die for! Not to mention the fact that they’re filled with grass-fed gelatine, perfect for healing and sealing the gut and making these a nourishing, protein-rich snack. They’re delicious both with and without the chocolate coating and are easily made vegan by replacing the gelatine with agar agar and the honey with pure maple syrup.       <image:caption>This date and walnut loaf is one of my earliest creations that I first made and posted back in 2017. I decided to make it again this weekend to share with friends and it’s still just as scrumptious as I remember it! Soaking the dates in hot chai tea and adding malty, sweet carob powder creates a delicious twist on the original. I have used Prana Chai as it is the best chai tea I have found. If you do not have chai tea, simply add chai spices to the pan, such as cinnamon, ginger, cloves and cardamom, as well as sea salt and honey. You will find carob powder available in health food stores. This loaf is high in protein and healthy fat from the almond meal, walnuts and eggs and only uses dates and a tiny bit of honey for sweetness. This loaf is delicious on its own or topped with organic butter/nut butter for a healthy snack or dessert and it goes perfectly with a cup of chai tea!</image:caption>

      <image:caption>This delicious savoury Japanese pancake is squishy on the inside and crispy on the outside, and full of flavour from the miso, pickled ginger and rice wine vinegar! For years, I looked on in envy as others devoured the okonomikyaki at our local Japanese restaurant. It wasn’t until last year that I discovered Undivided Food Co’s olive oil mayo and decided it had to be eaten atop a gluten free version of okonomiyaki. I used a combination of brown rice flour and tapioca flour to bind the mixture together and it provides such a wonderful texture. I simply used my mum’s homemade tomato relish on top (it’s seriously good – trust me on this one) until I ran out and chose Uncle Steve’s as the next best option as it contains much better ingredients than other brands that were full of additives.       <image:caption>Gluten-free, dairy-free and refined-sugar free! I have used brown rice flour and coconut sugar to keep these buns low GI and as wholesome as possible. Apart from family coming together, Hot Cross Buns are my next favourite thing about Easter! I love all kinds, but the choc-chip variety are my favourite. Why just have chocolate on Easter when you can have chocolate and sweet bread together? The chocolate melts through the soft bun when heated, the chai tea adds subtle warmth and spice, and when smeared with some organic butter, these are just divine! Gluten free baking takes a little bit of science experimentation. I did lots of research about how to ‘replicate’ or ‘mimic’ the gluten in gluten free baking to create a similar texture to regular baking with wheat. You may need to visit your local health food store for a few of these ingredients that help to thicken and bind the dough. Totally worth it when it means not missing out on this Easter treat because you can't have gluten. Enjoy with a steaming hot cup of tea!</image:caption>

      <image:caption>One thing I really miss on a gluten free diet is some sticky, flaky, nutty baklava! There’s no healthier gluten free version of phyllo pastry, so I decided to turn this delightful dessert into a slice with a wholesome base, a creamy frangipane layer and a spicy nut topping drizzled with honey syrup – it is to die for!! It can easily be made vegan by substituting maple syrup for the honey. If you want to keep it simple, just use 1/2 cup each of walnuts and pistachios, as long as you have equivalent to 1 cup of nuts all up. I hope you enjoy this sticky, nutty slice as much as I do!</image:caption>
